    Dim sum, a cherished tradition in Chinese culture, has undergone significant changes in recent years. The introduction of QR code ordering and modern approaches has brought convenience but has also reduced the personal touch and human interaction. As digital transformation continues, a key challenge is to preserve the traditional behaviours and spirit that make dim sum special. Unfortunately, traditional dim sum establishments like Lin Heung Tea House (蓮香樓) and Sun Hing Restaurant (新興食家) are becoming increasingly rare to find.The origins of dim sum can be traced back to the tea houses that emerged along the Silk Road trade route, connecting China with Central Asia and Europe. These tea houses initially served as resting places for weary travellers. As the popularity of dim sum grew, these establishments began offering bite-sized snacks alongside tea, providing nourishment and aiding digestion.Nowadays, in Hong Kong and many other cities, dim sum restaurants have adapted to modern dining habits by serving throughout the day and into the evening. For example, Hakkasan in Las Vegas offers a unique experience by serving dim sum from morning, accompanied by tea, until past midnight, with co*cktails. Despite these changes, the essence of yum cha remains the same - the enjoyment of delicious food in the company of loved ones.Looking ahead to the future, it remains uncertain what lies ahead for dim sum culture.     #MondayMusingsI love bread. Of all kinds and origins. They are the world’s comfort food. My mother in her loving ways, used to make soft sandwiches 🥪 of buttered bread with sprinkling of sugar. I ate this during recess pretty much through all my primary school years. Today, in #Singapore, you can easily eat/‘makan’ the 12th ranked (see table) bread in the world: ‘roti prata’, just about anywhere. Looking at the breads listed below, many are now part of the leavened comforts readily accessible here on our small little island with 5.5 million residents. Naan, focaccia, ciabatta, 葱油饼, bagels 🥯 , pita 🫓, baguette 🥖 You name it, we have it. ******It wasn’t always like that. 30 years ago, besides roti prata and kaya-loti (local-speak for kaya-spread toast) in local cuisine, perhaps the baguette (Delifrance, anyone?) was next commonly consumed among local folks. When did all the other breads arrive?******In George Yeo’s book Musings Series 3, he described the Singapore story, of how it being a hub may be seen from the perspective of the external and the internal: “Singapore in the world economy and the world in Singapore’s economy”. That’s the explanation. In the last 30 years, the world came to Singapore at a rapid pace: financial capital, technical knowledge and human talent. And with human talent, cultural assets. Cultural assets such as the various breads that enrich us as they become enmeshed in our gastronomic fanfare and delighting our tastebuds with an ever expanding repertoire. ******As for anyone who wishes to nitpick over roti prata versus roti canai, I say to you “naan the better”! #BreadTalk #CulturalDiversity

    Singaporeans are proud that we have gone from so-called Third World to First in a barely a generation. Yet, there are spots, littered throughout our clean, gleaming and modern metropolis, that are decidedly dirty, wet and smelly.I am talking about our hawker centre and coffee shop toilets.The general standard of cleanliness of the toilets in these ubiquitous places is generally abject. And decidedly worse than the same in the toilets in shopping malls and restaurants.Since humans like you and me are common users of both categories of toilets, the cause of the difference can be whittled down to one factor alone: the frequency of cleaning.In other words, dirty toilets in hawker centres and coffee shops are not the fault of users. It is the responsibility of the owners and operators of these locations to ensure that the toilets are washed and maintained regularly. The call of nature is universal and immutable. That is why access to clean toilets is a fundamental human need and right that accords with our dignity. These cleanliness and environmental standards also go beyond mere surface presentation or the yuck factor, to compromising and even endangering human health and wellness. Where our toilets are dirty, the chefs, food handlers and kitchen assistants can easily transfer pathogens from the toilet bowl to our food. And there have been enough reports of food poisoning, some of which caused fatalities, throughout the years. Enough is enough.We need owners and operators of hawker centres and coffee shops to fulfil their responsibility to clean and maintain the toilets.Relevant regulators, including the National Environment Agency, also need to step up on their inspections of the cleanliness of these toilets, and actively and conspicuously enforce where cleanliness, environmental, health or food safety standards are breached. This is especially since Singapore's hawker culture was successfully inscribed as the nation's first element on the UNESCO Representative List of the Intangible Cultural Heritage of Humanity.I am pretty sure that the dirty toilets are not part of the cultural heritage of humanity we are preserving and celebrating.#singapore #worldtoiletorganization #toilet #cleanliness #hawker #unesco (Image: Straits Times)
